Crispy Cabbage Fritters
Ingredients:
3 cups cabbage (finely shredded)
2 eggs
½ cup flour (or ⅓ cup flour + 2 tbsp cornstarch for extra crispiness)
1 small onion (grated or finely chopped)
1 garlic clove (minced)
½ tsp baking powder (optional, makes them fluffier)
Salt & pepper (to taste)
½ tsp paprika or chili flakes (optional)
3 tbsp fresh parsley or dill (chopped)
Oil (for frying)
Instructions:
Prep the Cabbage:
Slice cabbage very thinly (like in the picture).
Sprinkle lightly with salt and massage for 2 minutes to soften.
Make the Batter:
In a bowl, beat eggs.
Add onion, garlic, flour, baking powder, parsley, salt, and pepper.
Mix in cabbage until well coated. Batter should be sticky but not runny (add a little flour if too wet).
Fry the Fritters:
Heat oil in a skillet over medium heat.
Drop spoonfuls of the cabbage mixture and flatten slightly.
Fry 2–3 minutes per side until golden brown and crispy.
Serve:
Drain on paper towels.
Serve hot with sour cream, garlic yogurt sauce, or spicy ketchup.
