Mille-feuille Recipe (Napoleon Pastry)

  • 500 g puff pastry dough (homemade or ready-made)

For the Pastry Cream (Crème Pâtissière)

:

  • 500 ml whole milk
  • 120 g sugar
  • 4 large egg yolks
  • 50 g cornstarch
  • 50 g unsalted butter
  • 1 tsp vanilla extract

For the Icing

:

  • 150 g white fondant icing (or powdered sugar icing)
  • 30 g dark chocolate (melted)

Optional Garnish

:

  • Fresh raspberries or strawberries
  • Mint leaves

Instructions & Methods

Step 1: Prepare the Puff Pastry

  1. Preheat oven to 200°C (390°F).
  2. Roll out puff pastry into 3 equal rectangles.
  3. Place on baking sheet lined with parchment paper.
  4. Prick all over with a fork to prevent excessive puffing.
  5. Place another sheet of parchment on top and weigh down with another tray to keep them flat.
  6. Bake for 15–20 minutes until golden brown. Cool completely.

Step 2: Make the Pastry Cream

  1. Heat the milk in a saucepan until steaming but not boiling.
  2. In a bowl, whisk together egg yolks, sugar, and cornstarch until smooth.
  3. Slowly pour the hot milk into the egg mixture while whisking.
  4. Return the mixture to the saucepan and cook over medium heat until thickened.
  5. Remove from heat, stir in butter and vanilla.
  6. Cover with plastic wrap directly on the surface to prevent skin formation. Cool completely.

Step 3: Assemble the Mille-feuille

  1. Place one layer of baked puff pastry on a serving tray.
  2. Pipe or spread a layer of pastry cream evenly.
  3. Add the second layer of pastry and repeat the cream layer.
  4. Top with the final puff pastry sheet.

Step 4: Ice and Decorate

  1. Spread white fondant icing evenly over the top.
  2. Pipe thin lines of melted chocolate across the top.
  3. Use a toothpick to drag through the lines in alternating directions to create the feathered pattern.

Step 5: Chill and Serve

  1. Refrigerate for at least 1–2 hours for the layers to set.
  2. Slice with a sharp serrated knife, wiping between cuts for neat edges.
